Let's be real—sometimes, we all need that crunchy, salty fix that only fries can provide. But those deep-fried potatoes? Not always the healthiest choice. That's where these air fryer carrot fries swoop in to save the day! I remember my own initial skepticism. Carrot fries? Really? But trust me on this one. Roasting them in an air fryer brings out their natural sweetness, and the spicy peanut sauce adds a layer of complexity that'll keep you coming back for more. Plus, they're so easy to whip up, making them perfect for a quick snack or a side dish that even picky eaters will enjoy. Trust me; these are nothing like the soggy, sad attempts at healthy fries you might have encountered. I was totally against trying these at first, but then my sister made them, and i absolutely loved them so i wanted to make a recipe myself.

The magic lies in the combination of textures and flavors. The carrots become tender on the inside, slightly caramelized and crispy on the outside. The spicy peanut sauce, oh, that's the star! A blend of creamy peanut butter, fiery chili garlic sauce, tangy lime juice, and a touch of sweetness creates a harmonious explosion in your mouth. Honestly, I think these might be better than regular fries...dare I say it? It’s a flavor combination so good, it feels like a cheat meal even though it’s packed with vitamins and goodness. And who doesn’t love a dish that feels indulgent but is actually good for you? What does this mean for you? It means guilt-free snacking, a happy tummy, and a new favorite recipe in your repertoire! It might take a few tries to get the sauce just right, but thats the fun part right?

📖 Instructions

  1. Prep the Carrots: Start by washing and peeling about 1 pound of large carrots. I find it easiest to use a vegetable peeler for this. Make sure they're clean – no one likes gritty fries!
  2. Cut into Fries: Slice the carrots into even fry-shaped pieces, about 1/4 to 1/2 inch thick. Uniformity is key here so they cook evenly in the air fryer. Unevenly cut carrots will result in some being crispy and others being undercooked, which we definately do not want. If this is your first time cutting carrots into fries, take your time to make them look somewhat even.
  3. Season the Fries: In a medium bowl, toss the carrot fries with 1 tablespoon of olive oil, 1/2 teaspoon of smoked paprika, 1/4 teaspoon of garlic powder, 1/4 teaspoon of onion powder, and a pinch of salt and pepper. Ensure the spices are distributed evenly so every fry is coated. I sometimes like to add a dash of cayenne pepper for an extra kick!
  4. Air Fry: Preheat your air fryer to 400°F (200°C). Place the seasoned carrot fries in a single layer in the air fryer basket, working in batches if necessary to avoid overcrowding. Overcrowding will steam the fries instead of frying them, resulting in soggy fries. Cook for 12-15 minutes, flipping halfway through, until the fries are tender and slightly crispy. Keep an eye on them – air fryers can vary!
  5. Make the Peanut Sauce: While the fries are cooking, prepare the spicy peanut sauce. In a small bowl, whisk together 2 tablespoons of peanut butter (creamy or crunchy, your preference), 1 tablespoon of soy sauce, 1 tablespoon of rice vinegar, 1 teaspoon of honey or maple syrup, 1 teaspoon of sesame oil, 1/2 teaspoon of chili garlic sauce (or more, to taste!), and 1-2 tablespoons of warm water to thin it out to your desired consistency. Adjust the ingredients to suit your taste – if you like it sweeter, add more honey; if you like it spicier, add more chili garlic sauce. I know people are allergic to peanuts too, so maybe try with sunflower butter!
  6. Serve: Once the carrot fries are cooked, remove them from the air fryer and let them cool slightly. Drizzle generously with the spicy peanut sauce or serve it on the side for dipping. Garnish with sesame seeds, chopped cilantro, or green onions for extra flavor and visual appeal. Enjoy immediately! The fries are best when they're fresh and crispy.

📝 Notes

  • For extra crispy fries, toss with a tablespoon of cornstarch before air frying.
  • Adjust the amount of chili garlic sauce to control the spiciness.
  • If you don't have rice vinegar, apple cider vinegar works as a substitute.
