  1. First, gently wash your Seville oranges, strawberries, and banana. Its important to get the germs off, you know?
  2. Zest the Seville oranges using a grater or zester, being careful to avoid the white pith, which can be bitter. You want that orange flavor without the bitterness. I once went overboard and the marmalade was like, ugh, so bitter.
  3. Peel the Seville oranges and remove any seeds. Roughly chop the orange segments and place them in a large, heavy-bottomed saucepan.
  4. Hull the strawberries and slice them into smaller pieces. Add the strawberries to the saucepan with the oranges. Like, really get in there.
  5. Add the sugar, lemon juice, and a pinch of salt to the saucepan. The lemon juice helps to brighten the flavors, and the salt balances the sweetness.
  6. Place the saucepan over medium heat. Bring the mixture to a boil, then reduce the heat to low and simmer gently for about 45-60 minutes, or until the marmalade has thickened and the orange peel is softened. Stir occasionally to prevent sticking.
  7. To test the marmalade for doneness, place a small spoonful on a chilled plate. If it sets quickly and wrinkles when you push it with your finger, it's ready. If not, continue to simmer for a few more minutes and test again. I'm impatient so I just chuck it in the fridge for like 30 seconds.
