I remember the first time I tried a salad quite like this. I was at a small cafe tucked away in a corner of town, known for its quirky combinations and fresh ingredients. At first, I wasn't convinced strawberries belonged anywhere near feta, but one bite changed everything. It was a revelation, the kind that makes you rethink what a salad could be. Ever since then, I’ve been experimenting, tweaking, and perfecting my own version, and I'm thrilled to finally share it with you. The sweetness of strawberries paired with the salty feta is just a perfect match for the summer. Don't even get me started on the balsamic glaze – chef's kiss.
What makes this salad truly special is the combination of flavors and textures. The sweetness of ripe strawberries, the creamy tang of feta cheese, the satisfying crunch of pistachios, and the zing of red onion—all drizzled with a luscious balsamic glaze. It's a party in your mouth, and trust me, you're invited. This salad isn't just a side dish; it's a statement. It's proof that healthy eating can be exciting, flavorful, and downright crave-able. This is more than just a salad; it's an experience. What does this mean for you? It means ditching those same old boring salads and embrassing a salad that will have everyone begging for the recipe! I have literally had my friends fight over the left overs. It's a pretty funny sight!

📖 Instructions
Prep the Strawberries: Gently wash 1 pound of fresh strawberries. Hulll them (remove the green tops) and slice them into quarters. I like to use a strawberry huller, but a pairing knife works just fine!
Crumble the Feta: In a large bowl, crumble 4 ounces of feta cheese. If you're not a fan of feta, goat cheese works well too. But lets face it, if you don't like feta then what's wrong with you?
Chop the Pistachios: Roughly chop 1/2 cup of shelled pistachios. You can use a knife or a food processor for this. Just be careful not to over-process them, unless you want pistachio butter.
Slice the Red Onion: Thinly slice 1/4 of a red onion. If you're sensitive to the taste of raw onion, you can soak the slices in cold water for 10 minutes to mellow the flavor.
Combine Ingredients: Add the sliced strawberries, crumbled feta, chopped pistachios, and sliced red onion to the large bowl. Gently toss everything together to combine.
Make the Balsamic Glaze (if not using pre-made): In a small saucepan, combine 1/2 cup of balsamic vinegar with 1 tablespoon of honey or maple syrup (optional, for added sweetness). Bring the mixture to a simmer over medium heat, then reduce the heat to low and let it simmer for 10-15 minutes, or until it has reduced and thickened into a syrupy glaze. Let it cool slightly before using. You can buy pre-made balsamic glaze to save on time!
Assemble the Salad: Arrange a bed of fresh spinach or mixed greens (about 5 ounces) on a platter or individual plates. Top with the strawberry-feta-pistachio mixture.
Drizzle with Balsamic Glaze: Drizzle the balsamic glaze over the salad just before serving. Be generous – it's what brings all the flavors together! If you don't like balsamic, you can skip this step
Serve Immediately: This salad is best enjoyed fresh. Serve immediately and watch your guest enjoy this delicious salad!
Optional Additions: For an extra touch, consider adding fresh mint or basil leaves. A sprinkle of black pepper can also enhance the flavors. You can even try adding grilled chicken or shrimp for a heartier meal.
