  1. First, gather all your ingredients. It's always best to have everything prepped and ready to go. This will make the whole process much smoother.
  2. If you're making your own pulled pork, start a day ahead. Slow-cooking the pork ensures it's fall-apart tender and packed with flavor. Alternatively, you can use pre-made pulled pork from your favorite barbecue spot. I did this once when my slow cooker died, so its fine!. You want about 2 cups.
  3. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. This prevents sticking and makes cleanup a breeze. Nobody likes scrubbing baked-on pastry!
  4. Lightly flour a clean surface. Roll out the puff pastry sheet to about 1/8-inch thickness. Use a pizza cutter or sharp knife to cut the pastry into 2-inch squares. You should get around 24 squares from a standard sheet. Or maybe a bit more, depending on the puff pastry.
  5. In a small bowl, whisk together the barbecue sauce and a pinch of cayenne pepper (if using). This adds a little kick and balances the sweetness of the sauce. If you dont like spicy, don't add any. Its ok!
  6. Place about 1 tablespoon of pulled pork in the center of each pastry square. Don't overfill them, or they'll be difficult to seal. I learned that lesson the hard way.
  7. Brush the edges of the pastry squares with a beaten egg. This helps them seal properly and gives them a nice golden color when baked.
  8. Fold the pastry squares over to form triangles. Press the edges firmly with a fork to seal. This ensures the filling stays inside during baking. You dont want to waste it!. You can also use fun cookie cutters instead of just squares! It's a great option for parties.
  9. Place the Wellington Bites on the prepared baking sheet. Brush the tops with more beaten egg. This gives them a beautiful shine. I like to sprinkle sesame seeds on top sometimes, too. Its just something fun to do.
  10. Bake for 15-20 minutes, or until the pastry is golden brown and puffed up. Keep a close eye on them, as ovens can vary. You dont want them to burn!
  11. While the Wellington Bites are baking, prepare the balsamic glaze. In a small saucepan, combine balsamic vinegar and brown sugar over medium heat. Bring to a simmer, then reduce heat to low and cook for 5-7 minutes, or until the glaze has thickened slightly. It should coat the back of a spoon. Be careful not to burn it! Burn balsamic vinegar smells horrible.
  12. Once the Wellington Bites are out of the oven, let them cool slightly before drizzling with the balsamic glaze. Serve warm and watch them disappear!
