  2. For the Adobo Ribs, in a large bowl, combine the pork ribs with soy sauce, vinegar, minced garlic, crushed peppercorns, bay leaves, and brown sugar. Make sure the ribs are well coated in the marinade. Cover the bowl and let it marinate in the refrigerator for at least 4 hours, but preferably overnight.
