Prepare the beef: Slice 1 pound of beef sirloin (or your preferred cut) against the grain into thin strips, about 1/4 inch thick. This ensures tenderness! Place the beef in a bowl and toss with 1 tablespoon of soy sauce and 1 teaspoon of cornstarch. This marinade will tenderize the meat and help it brown nicely in the wok. Let it sit for at least 10 minutes, or up to 30 minutes in the refrigerator. Dont leave it for too long!
Prep the veggies: While the beef is marinating, wash and core 2 bell peppers (use a mix of colors for visual appeal – red, yellow, orange, green - that is, if you want to). Slice the bell peppers into thin strips, similar in size to the beef. Chop 1 medium onion into thin wedges. Mince 2 cloves of garlic and 1-inch piece of ginger. Set all veggies aside.
Mix the stir-fry sauce: In a small bowl, whisk together 2 tablespoons of soy sauce, 1 tablespoon of hoisin sauce, 1 tablespoon of rice vinegar, 1 teaspoon of sesame oil, 1/2 teaspoon of sugar, and 1/4 cup of beef broth (or water).
