  1. Prepare the beef: Slice 1 pound of beef sirloin (or your preferred cut) against the grain into thin strips, about 1/4 inch thick. This ensures tenderness! Place the beef in a bowl and toss with 1 tablespoon of soy sauce and 1 teaspoon of cornstarch. This marinade will tenderize the meat and help it brown nicely in the wok. Let it sit for at least 10 minutes, or up to 30 minutes in the refrigerator. Dont leave it for too long!
  2. Prep the veggies: While the beef is marinating, wash and core 2 bell peppers (use a mix of colors for visual appeal – red, yellow, orange, green - that is, if you want to). Slice the bell peppers into thin strips, similar in size to the beef. Chop 1 medium onion into thin wedges. Mince 2 cloves of garlic and 1-inch piece of ginger. Set all veggies aside.
  3. Mix the stir-fry sauce: In a small bowl, whisk together 2 tablespoons of soy sauce, 1 tablespoon of hoisin sauce, 1 tablespoon of rice vinegar, 1 teaspoon of sesame oil, 1/2 teaspoon of sugar, and 1/4 cup of beef broth (or water).   7. Add the bell peppers: Add the sliced bell peppers to the wok and stir-fry for 3-4 minutes, until they are tender-crisp. You want them to retain some of their crunch. if you like them softer cook for longer. i personally love a little crunch.
  8. Combine everything: Return the seared beef to the wok with the veggies. Pour the stir-fry sauce over the beef and vegetables. Stir-fry for 1-2 minutes, until the sauce has thickened and everything is well coated.
  9. Serve immediately: Serve the Bell Pepper Bonanza Beef Stir-Fry immediately over steamed rice or noodles. Garnish with sesame seeds and chopped green onions, if desired. Enjoy!
