Okay, story time. Last summer, I went on this amazing trip to Costa Rica. I swear, everywhere I looked, there were mangoes just hanging from trees! One afternoon, while lounging by the beach (tough life, I know!), I met this local woman selling fresh fruit. She had this incredible salsa—mango, passion fruit, a touch of chili… It was seriously mind-blowing. I tried to get her recipe, but she just winked and said, 'It's a secret!' Well, challenge accepted! I came home determined to recreate that taste of paradise, and after a few… okay, maybe many attempts, I think I finally nailed it. This Passion Fruit Plunge Mango Salsa is my tribute to that amazing Costa Rican afternoon. And let me tell you, its so good, it taste just like that trip..

What I love most about this salsa (besides the fact that it's ridiculously delicious) is how versatile it is. Serve it with tortilla chips for a crowd-pleasing appetizer. Spoon it over grilled chicken or fish for a tropical twist. Or, if you're feeling adventurous, try it with scrambled eggs for a sweet-and-savory breakfast sensation. Honestly, the possibilities are endless! And hey even though I'm no professional chef and sometimes I misspell words but this recipe is super easy to make and it needs few ingredients. This is a perfect recipe for any occasion.

📖 Instructions

  1. First things first: Gently wash your mangoes, red onion, jalapeño, and cilantro. It’s important to start with clean ingredients, you know?
  2. Next, peel the mangoes and dice them into small, bite-sized pieces. You want them to be about 1/4-inch in size. If your mango is super ripe, it can be a little slippery, so take your time and be careful not to cut yourself. Remember safety first!
  3. Peel and finely dice the red onion. Red onion adds a lovely sharpness and color to the salsa. Try to dice it as finely as possible to avoid overpowering the other flavors. Nobody wants a big chunk of onion in their salsa.
  4. Carefully remove the seeds and ribs from the jalapeño. Unless, of course, you like your salsa REALLY spicy! Finely dice the jalapeño. Remember to wash your hands thoroughly after handling jalapeños – trust me on this one!
  5. Chop the cilantro. Don't be shy with the cilantro! It adds a fresh, vibrant flavor to the salsa. If you're not a fan of cilantro (I know some people aren't!), you can substitute it with flat-leaf parsley. But for real, give the cilantro a try!
  6. Now for the star of the show: the passion fruit! Cut the passion fruits in half and scoop out the pulp and seeds into a small bowl. The passion fruit adds a tangy, tropical sweetness that is just divine.
  7. In a medium-sized bowl, combine the diced mangoes, red onion, jalapeño, and cilantro.
  8. Pour the passion fruit pulp over the mixture. Add the lime juice and salt. Gently stir everything together to combine. Be careful not to mash the mangoes.
  9. Taste the salsa and adjust the seasoning as needed. You might want to add a little more lime juice for extra tang, or a pinch of salt to bring out the flavors. The recipe is adaptable to what you like!
  10. Cover the bowl and refrigerate the salsa for at least 30 minutes to allow the flavors to meld together. This step is important! The salsa will taste even better if you let it chill for a few hours.
  11. Before serving, give the salsa another gentle stir. Serve chilled with tortilla chips, grilled meats, fish, or anything your heart desires! Get crazy with it!

📝 Notes

  • For a sweeter salsa, use extra ripe mangoes.
  • Adjust the amount of jalapeño to your spice preference.
  • Store leftover salsa in an airtight container in the refrigerator for up to 3 days.
  • Try adding other fruits like pineapple or strawberries for a unique twist.
  • If you want it to look nice place in a decorative bowl.
