Aim for a temperature of around 150-160°F (65-70°C). If you don't have a thermometer, heat until small bubbles start to form around the edges and steam is visible.
  2. Froth the Milk: Once the milk is heated, it's time to create that luscious froth. If you have an espresso machine with a steam wand, use it to froth the milk until it doubles in volume and has a velvety texture. Alternatively, you can use a handheld milk frother, an immersion blender, or even a whisk. For the whisk method, vigorously whisk the milk in a circular motion until foamy.
  3. Sift the Matcha: While the milk is heating, sift 1-2 teaspoons of fair trade matcha powder into a small bowl. Sifting is crucial to remove any clumps and ensure a smooth latte. Nobody wants clumpy matcha!
  4. Create a Matcha Paste: Add a tablespoon or two of hot (but not boiling) water to the sifted matcha powder. Use a bamboo whisk (chasen) or a small whisk to create a smooth, vibrant green paste. The paste should be thick enough to easily dissolve into the milk.
  5. Sweeten with Maple Syrup: Add 1-2 tablespoons of pure maple syrup to the matcha paste. Adjust the amount according to your preference. Stir well to combine. If you prefer a less sweet latte, start with 1 tablespoon and add more as needed.
  6. Combine Matcha and Milk: Pour the matcha-maple syrup mixture into your favorite mug. Slowly pour the frothed milk over the matcha, holding back some of the foam with a spoon. This allows you to create a beautiful layered effect.
