  1. Rinse the Sticky Rice: Place the sticky rice in a fine-mesh sieve and rinse under cold water until the water runs clear. This usually takes a few minutes and helps remove excess starch for that perfect, slightly chewy texture. Don't skip this; it's important!
  2. Soak the Rice: In a bowl, cover the rinsed rice with plenty of water. Let it soak for at least 4 hours, or preferably overnight. Soaking ensures that the rice cooks evenly and becomes wonderfully tender. I usually do this before going to bed so it’s ready in the morning.
  3. Steam the Rice: Drain the soaked rice and transfer it to a steamer lined with cheesecloth or parchment paper. Steam over medium heat for about 20-25 minutes, or until the rice is translucent and tender. Make sure the water in the steamer doesn’t run out! Pro tip: fluff the rice halfway through to ensure even cooking.
  4. Make the Coconut Sauce: While the rice is steaming, prepare the coconut sauce. In a saucepan, combine the coconut milk, sugar, and salt. Heat over medium heat, stirring constantly until the sugar is dissolved. Be careful not to boil it! Once the sugar is dissolved, remove from heat and stir in the cornstarch slurry (mix cornstarch with a tablespoon of cold water until smooth). This will thicken the sauce slightly.
  5. Combine Rice and Sauce: Once the rice is cooked, gently fold in about three-quarters of the coconut sauce. Mix well to ensure the rice is evenly coated. Reserve the remaining coconut sauce for drizzling on top of the parfaits.
  6. Prepare the Mangoes: Peel the mangoes and cut them into bite-sized pieces or thin slices. The fresher and riper the mangoes, the better the parfait will taste. Sometimes I like to grill them lightly for an added smoky flavor.
  7. Assemble the Parfaits: Now for the fun part! In individual glasses or parfait dishes, layer the sticky rice and mangoes. Start with a layer of sticky rice, followed by a layer of mangoes, and repeat. Don't be afraid to get creative with the layers!
  8. Garnish and Serve: Drizzle the remaining coconut sauce over the top of each parfait. Garnish with toasted sesame seeds, shredded coconut, or a sprig of mint for a pop of color. Serve immediately, or chill for a few hours to allow the flavors to meld together. You can also add a scoop of vanilla ice cream for extra indulgence. Its not something I usually do, but its fun to have on hand!
