  1. Gather your ingredients: You'll need boneless, skinless chicken breasts (cut into 1-inch cubes), fresh pineapple (cut into 1-inch chunks), red onion (cut into wedges), bell peppers (cut into 1-inch pieces), soy sauce, brown sugar, rice vinegar, ginger (grated), garlic (minced), sesame oil, and wooden skewers.
  2. Prepare the marinade: In a medium bowl, whisk together the soy sauce, brown sugar, rice vinegar, ginger, garlic, and sesame oil. Taste and adjust the seasonings as needed. I like mine a little more on the sweet side, so i sometimes add a touch more brown sugar
  3. Marinate the chicken: Add the chicken cubes to the marinade, ensuring they are fully coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours. Longer marinating times will result in more flavorful and tender chicken.
  4. Soak the skewers: While the chicken is marinating, soak the wooden skewers in water for at least 30 minutes. This will prevent them from burning on the grill. Nobody wants burnt skewers!
  5. Preheat the grill: Preheat your grill to medium-high heat (about 375°F or 190°C). Make sure the grates are clean and lightly oiled to prevent sticking.
  6. Assemble the skewers: Thread the chicken, pineapple, red onion, and bell peppers onto the skewers, alternating the ingredients as you go. Try to keep the pieces relatively close together for even cooking.
  7. Grill the skewers: Place the skewers on the preheated grill. Cook for about 8-12 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender and slightly charred. Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F (74°C).
