  2. Prepare the peaches: Halve the peaches and remove the pits. Lightly brush the cut sides with olive oil. This helps them caramelize beautifully on the grill.
  3. Grill the peaches: Place the peach halves cut-side down on the grill. Cook for about 3-4 minutes, or until they have nice grill marks and are slightly softened. Remove from the grill and set aside to cool slightly. Once cool enough to handle, slice them into wedges.
  4. Prepare the pizza dough: If using store-bought dough, stretch or roll it out to your desired shape – about 12-14 inches in diameter. If making your own dough, follow your recipe instructions. I once tried making pizza dough with beer instead of water... Lets just say it was an experiment gone wrong! Learn from my mistakes, people!
