Grab a jar, container, or whatever you have around. I personally love mason jars, because they're easy to grab. It's just my opinion though!
Add the rolled oats to the jar. Old-fashioned or quick oats both work, but I prefer old-fashioned for a chewier texture. Just don't use steel-cut oats – they don't soften up enough overnight.
Pour in the milk (dairy or non-dairy – whatever floats your boat!). Make sure the oats are mostly covered.
Stir in the pumpkin puree. Not pumpkin pie filling, okay? Just plain pumpkin puree. Trust me on this one.
Add the maple syrup (or honey, agave, whatever sweetener you like). Start with the amount listed in the recipe, then adjust to your liking. Taste it!
Sprinkle in the pumpkin pie spice. Don't skip this! It's what gives these oats that signature pumpkin spice flavor.
Add the chia seeds (if using). They help thicken the oats and add a little boost of fiber. Plus, they’re totally optional if you don’t have them.

Seal the jar tightly and refrigerate overnight (or for at least 4 hours). This gives the oats time to soften and the flavors to meld together. I have had it longer. Usually 8 hours is great!
In the morning, give the oats a good stir. If they're too thick, add a splash of milk to reach your desired consistency.
Top with your favorite toppings! I like whipped cream (or coconut whipped cream for a dairy-free option), a sprinkle of pumpkin pie spice, and maybe a drizzle of maple syrup. You can also add chopped nuts, seeds, or fruit.
