  2. Add the rolled oats to the jar. Old-fashioned or quick oats both work, but I prefer old-fashioned for a chewier texture. Just don't use steel-cut oats – they don't soften up enough overnight.
  3. Pour in the milk (dairy or non-dairy – whatever floats your boat!). Make sure the oats are mostly covered.
  4. Stir in the pumpkin puree. Not pumpkin pie filling, okay? Just plain pumpkin puree. Trust me on this one.
  5. Add the maple syrup (or honey, agave, whatever sweetener you like). Start with the amount listed in the recipe, then adjust to your liking. Taste it!
  6. Sprinkle in the pumpkin pie spice. Don't skip this! It's what gives these oats that signature pumpkin spice flavor.
  7. Add the chia seeds (if using). They help thicken the oats and add a little boost of fiber. Plus, they’re totally optional if you don’t have them.
  8. Pour in the cooled coffee or espresso. This gives the oats that latte vibe. If you're not a coffee fan, you can skip this, but you'll be missing out!
