  1. Start by preparing the blackberry layer. In a medium bowl, combine 1 cup of fresh or frozen blackberries (if using frozen, no need to thaw), 2 tablespoons of maple syrup or honey, and a squeeze of lemon juice (about 1/2 teaspoon).
  2. Gently mash the blackberries with a fork until they release some of their juices. This will create a delicious blackberry compote.
  3. In a seperate bowl, prepare the crumble topping. Combine 1/4 cup of rolled oats, 2 tablespoons of almond flour (or all-purpose flour), 2 tablespoons of brown sugar (or coconut sugar), 1/4 teaspoon of ground cinnamon, and a pinch of salt.
  4. Melt 2 tablespoons of coconut oil or butter and pour it over the dry ingredients. Mix well with a fork until the mixture forms small clumps. If it looks to dry, add a teaspoon of melted coconut oil at a time.
  5. In a jar or container that you plan to keep in the fridge over night, layer half of the blackberry compote at the bottom.
