If you’re doing it by hand, watch out for those seeds! Strain the juice to remove any pulp or seeds. I hate finding seeds in my drinks; it's just annoying.
  3. Make a simple syrup: In a saucepan, combine 1 cup of granulated sugar with 1 cup of water. Heat over medium heat, stirring constantly, until the sugar is completely dissolved. Let it cool. This simple syrup is like liquid gold; it brings the sweetness that balances the tartness of the limes.
  4. Combine lime juice and simple syrup: In a large pitcher, pour the fresh lime juice and the cooled simple syrup. Stir well to combine. Taste and adjust the sweetness to your liking.
