  1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish. I typically use butter because I like the flavor, but cooking spray works just as well. Make sure you get into all the corners!
  2. Cut the bread into 1-inch cubes. You'll need about 8 cups. I often use challah or brioche for this recipe, but any hearty bread will do. Let the bread sit out for about 30-40 minutes to dry out.
  3. In a large bowl, whisk together the eggs, milk, heavy cream, pumpkin puree, sugar, pumpkin pie spice, vanilla extract, and salt. Make sure everything is well combined.
  4. Add the bread cubes to the egg mixture and gently toss to coat. Press down lightly to ensure the bread soaks up the liquid. Let it sit for 15-20 minutes to allow the bread to absorb the custard.
  5. While the bread is soaking, prepare the cream cheese swirl. In a separate bowl, beat together the cream cheese, sugar, and egg yolk until smooth and creamy. It should be easy to spread.
  6. Pour half of the bread mixture into the prepared baking dish. Dollop half of the cream cheese mixture over the bread, then swirl it gently with a knife or skewer. Be careful not to over-mix.
  7. Pour the remaining bread mixture over the cream cheese layer. Dollop the remaining cream cheese mixture over the top and swirl again. I like to make mine look like spider webs! It's spooky season, after all.
  8. Bake for 45-55 minutes, or until the bread pudding is golden brown and set. A knife inserted into the center should come out clean. If the top starts to brown too quickly, cover it loosely with foil.
  9. Let the bread pudding cool for at least 15-20 minutes before serving. This allows it to set up a bit and makes it easier to slice. It’s delicious served warm or at room temperature. I personally think it tastes best warm, with a scoop of vanilla ice cream.
  10. Optional: Drizzle with maple syrup or sprinkle with powdered sugar before serving. You can also top it with toasted pecans or whipped cream. Get creative and make it your own!
  11. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven or microwave.
