  3. Remove the saucepan from the heat and let it stand, covered, for 10 minutes. This allows the rice to finish steaming and ensures it's perfectly fluffy.
  4. While the rice is cooking, prepare the sushi vinegar. In a small bowl, whisk together 2 tablespoons of rice vinegar, 1 tablespoon of sugar, and 1/2 teaspoon of salt until the sugar and salt are dissolved.
  5. Once the rice is cooked, gently transfer it to a large bowl. Drizzle the sushi vinegar over the rice and gently fold it in using a rice paddle or spatula. Be careful not to mash the rice; you want to keep the grains intact.
