  1. Prepare the strawberries: Wash 1 pound of fresh strawberries. Remove the stems and hull them (that little white part at the top). Roughly chop about three quarters of the strawberries and set them aside. This is imporatnt.
  2. Make the strawberry puree: Place the remaining quarter of the strawberries in a blender or food processor. Process until smooth, creating a puree. Strain the puree through a fine-mesh sieve to remove seeds, if desired (this is completely optional, but results in a smoother mousse).
  3. Bloom the gelatin: In a small bowl, sprinkle 2 teaspoons of unflavored gelatin over 2 tablespoons of cold water. Let it sit for 5-10 minutes to soften. This step is called blooming the gelatin and it’s critical for proper setting.
  4. Heat the gelatin: Microwave the bloomed gelatin for about 15-20 seconds, or until it is completely dissolved. Be careful not to overheat it. You just want it to melt.
  5. Whip the cream: In a large bowl, using an electric mixer or stand mixer fitted with the whisk attachment, beat 1 1/2 cups of heavy cream until stiff peaks form. This usually takes about 3-5 minutes. Don't over-whip, or you'll end up with butter!
  6. Combine the ingredients: In a separate bowl, gently fold together the strawberry puree, dissolved gelatin, and 1/2 cup of granulated sugar. Make sure the gelatin isn't too hot when you add it to the puree or else it might cook the strawberries. Then, gently fold in the whipped cream until just combined. Be careful not to overmix, or you’ll lose the airiness.
  7. Add chopped strawberries: Gently fold in the chopped strawberries. Distribute them evenly throughout the mousse.
  8. Chill: Divide the mousse among glasses or a serving bowl. Cover with plastic wrap and refrigerate for at least 2 hours, or until set. I usually let it sit in the fridge for a good 4 hours or even overnight, just to be safe. But that is my preference.
  9. Garnish and serve: Before serving, garnish with additional fresh strawberries, whipped cream, a sprig of mint, or chocolate shavings, if desired. Get creative!
  10. Enjoy!: Dig in and savor the light, fluffy, strawberry goodness!

📝 Notes

  • For a richer mousse, use full-fat heavy cream.
  • If you don't have fresh strawberries, you can use frozen strawberries, but be sure to thaw and drain them well before using.
