  1. Gather Your Ingredients: This might sound obvious, but having everything measured and prepped beforehand is KEY. Trust me; you don't want to be scrambling for spices mid-mixing!
  2. Combine Dry Ingredients: In a large bowl, whisk together the gluten-free flour blend, almond flour, brown sugar, and spice blend (cinnamon, cloves, nutmeg, ginger, white pepper, cardamom). Make sure to get rid of any lumps; nobody likes a lumpy cookie!
  3. Incorporate Wet Ingredients: Add the softened butter and egg to the dry ingredients. Mix on low speed until a dough starts to form. Don't overmix! A little bit of gluten-free dough can be a tad fussy, but that's ok.
  4. Chill the Dough: Wrap the dough in plastic wrap and flatten it into a disc. Refrigerate for at least 2 hours, or preferably overnight. Chilling is crucial; it prevents the cookies from spreading too much during baking.
  5. Preheat and Prep: Preheat your oven to 325°F (160°C). Line baking sheets with parchment paper. This is non-negotiable, unless you want to spend the next hour scraping burnt cookies off your baking sheet.
  6. Roll Out the Dough: On a lightly floured surface (use gluten-free flour!), roll out the dough to about 1/4 inch thickness. If the dough is too sticky, chill it for another 15-20 minutes.
  7. Cut Out Shapes: Use speculaas cookie cutters (or any fun shapes you like!) to cut out cookies. Gently transfer them to the prepared baking sheets. Space them about 1 inch apart.
  8. Bake: Bake for 12-15 minutes, or until the edges are lightly golden brown. Keep a close eye on them; gluten-free cookies can go from perfectly baked to burnt in a flash!

  10. Optional Decoration: If you are feeling fancy, decorate with some icing. I like to do a simple powdered sugar glaze. Yummy!
