Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan. I forgot to grease my pan once and it was a MESS.
In a large bowl, mash 3 ripe bananas until smooth. You should have about 1 1/2 cups of mashed banana.
Add 1/2 cup of melted coconut oil (or vegetable oil), 1/2 cup of granulated sugar, 1/4 cup of packed brown sugar, 2 large eggs, and 1 teaspoon of vanilla extract to the mashed bananas. Whisk until well combined.
In a separate bowl, whisk together 1 1/2 cups of gluten-free all-purpose flour blend (make sure it contains xanthan gum!), 1 teaspoon of baking soda, 1/2 teaspoon of ground cinnamon, and 1/4 teaspoon of salt.
