  1. First, we need to prepare our seabass. Pat 1.5 pounds of seabass fillets dry with paper towels. This helps to get a good sear later on. Season generously with salt and pepper.
  2. Next, grab a large skillet or Dutch oven. Heat 2 tablespoons of olive oil over medium-high heat. Sear the seabass fillets for about 3-4 minutes per side, until golden brown and cooked through. Remove the seabass from the skillet and set aside.
  3. Now, for the aromatic base! Add 1 diced yellow onion and 2 cloves of minced garlic to the skillet. Sauté for about 5 minutes, until the onion is translucent and fragrant.
  4. Introduce the spice! Stir in 1 diced red bell pepper and 1 jalapeño pepper, finely chopped (remove the seeds if you prefer less heat). Cook for another 3 minutes, allowing the peppers to soften slightly.
  5. Time for the chili magic! Add 2 tablespoons of chili powder, 1 teaspoon of cumin, and 1/2 teaspoon of smoked paprika. Stir well to coat the vegetables with the spices. Cook for 1 minute, until fragrant.
  6. Pour in 1 (28-ounce) can of crushed tomatoes and 1 cup of chicken broth. Bring the mixture to a simmer, then reduce the heat to low.
  7. Add the unexpected sweetness! Stir in 1 cup of red grapes, halved. Yes, you read that right! These lil guys add a fun twist!
