  1. Brew a strong cup of coffee: Start by brewing about 1 cup (240ml) of strong coffee. Let it cool slightly. This will be the base of our flavorful pops. I prefer using a dark roast for a more intense coffee flavor, but use whatever you like!
  2. Combine ingredients: In a blender or food processor, combine the cooled coffee, 1/2 cup (120ml) of milk (dairy or non-dairy), 1/4 cup (25g) of unsweetened cocoa powder, 1/4 cup (50g) of sugar (or sweetener of choice), 1 teaspoon of vanilla extract, and a pinch of salt. I sometimes forget the salt, but it really does enhance the flavors!
  3. Blend until smooth: Blend the mixture until it’s perfectly smooth and creamy. Make sure there are no lumps of cocoa powder remaining. Nobody wants lumpy pops!
  4. Taste and adjust: Give the mixture a taste and adjust the sweetness to your liking. Add a bit more sugar if you prefer a sweeter pop, or a splash of coffee for a bolder coffee flavor. I usually end up adding a little more cocoa because... chocolate!
  5. Pour into molds: Pour the mixture evenly into your popsicle molds, leaving a little space at the top for expansion. If you don’t have popsicle molds, small paper cups work just fine (just make sure they're sturdy!).
  6. Insert popsicle sticks: Insert popsicle sticks into the center of each mold. If using paper cups, wait until the mixture is partially frozen before inserting the sticks, so they stand upright. A little trick is to cover the cups with foil and poke the sticks through – it helps keep them centered!
  7. Freeze: Place the molds in the freezer and freeze for at least 4-6 hours, or preferably overnight, until completely solid. Patience is key here!
  8. Unmold the pops: To unmold the pops, run the molds under warm water for a few seconds to loosen them. Gently pull on the popsicle sticks to remove the pops from the molds. If they’re stubborn, let them sit at room temperature for a minute or two. Sometimes I wrap a warm, damp towel around the molds to speed things up.
  9. Enjoy: That's it! Enjoy your delicious Coffee Chocolate Fudge Pops immediately! Store any leftovers in the freezer, wrapped individually in plastic wrap or in a freezer bag. My pops never last long enough to be stored!
