First, you'll want to gather all your ingredients and equipment. Having everything prepped and ready to go makes the process so much smoother. I usually do this the night before a camping trip.
Next, place the chicken thighs or breasts in the bottom of your crockpot. If using bone-in, skin-on thighs, you might want to consider removing the skin to reduce the fat content. Alternatively, you can sear them in a pan before adding them to the crockpot, but, for camping? Keep it SIMPLE!
In a bowl, combine the peach preserves, BBQ sauce, apple cider vinegar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, salt, and pepper. Mix well until everything is evenly incorporated. The mixture should be thick but pourable. If you want an extra kick, add a pinch of cayenne pepper.
Pour the peach BBQ sauce mixture over the chicken, ensuring each piece is well coated. I like to use a spatula to spread the sauce evenly. At this stage, you can add a sliced onion or some peach slices for extra flavor, but that's extra and we don't need EXTRA.
